Hazelnut Cookies recipe
Ingredients:
2 cups hazelnuts, toasted
2 eggs, beaten
1 cup packed brown sugar
1 teaspoon vanilla extract
Preparation Instructions:
1) Preheat oven to 350°F. Line a baking sheet with parchment paper.
2) Grind hazelnuts in a food processor until coarse. Transfer to a large bowl; add eggs, sugar, and vanilla. Beat well.
3) Drop batter by the tablespoon onto prepared baking sheet, allowing an inch space between each cookie. Bake 20 to 23 minutes, until cookies are dark golden and just firm.
4) Remove from oven and allow to cool before removing from baking sheet.
Notes about this recipe:
This recipe is proof that cookies don't need any flour at all to be cookies. Ground nuts and brown sugar make for an excellent cookie that any kid or adult will adore.
