Hazelnut Loaf Cake recipe

Ingredients:

1 cup of soft margarine and 2 tablespoons of soft margarine.
1 cup of granulated sugar.
2 tablespoons of vanilla sugar.
4 medium eggs.
2 ½ cups of ground hazelnuts.
1 ¾ cups of self-raising flour.
1 teaspoon of baking powder.
1 tablespoon of brandy.
Powdered sugar.

Preparation Instructions:

Preheat your oven to 350°F (175°C).

Grease a 9 inch by 5 inch loaf pan.

In a suitably sized bowl, beat the margarine, granulated sugar and vanilla sugar until light and fluffy.

Beat in the eggs, one at a time.

Add the ground hazelnuts.

Sift together the flour and baking powder; then fold into mixture, combining thoroughly.

Stir in the brandy.

Turn the batter into your greased loaf pan.

Bake for 60 to 70 minutes or until a skewer inserted in the middle comes out clean.

Remove from the pan and allow to cool on a wire rack.

Sift the powdered sugar over the fully cooled cake.
